For us, sustainability is not a trend, but an attitude. For decades, we have been scrutinising ourselves, developing ourselves further and always keeping an eye on what really matters: our environment, our resources - and the people who live and work here.

Apples
Apple growing has a long tradition in Kaltern - and characterises both the landscape and the enjoyment. Sunny locations and the mild climate create ideal conditions for flavoursome fruit. Crisp, red-cheeked Fuji apples grow in our own orchard, which we process fresh every day: for our legendary apple strudel, golden apple cakes, delicious compotes and our popular apple juice. Or simply in the basket at the buffet - freshly picked, juicy and perfect for biting into.
Wine
Wine has characterised Kaltern for centuries - and is an integral part of the regional identity. Our family has been cultivating its own vines in prime locations around our hotel since 1882: traditionally trained on pergolas and modern on wire frames. Kalterersee Vernatsch, a local hero, strong Cabernet, round Merlot and fresh and fruity Muscatel thrive here.

Particularly noteworthy is our top single vineyard Prutznai with Cabernet Sauvignon of exceptional quality. All wines are vinified exclusively as special bottlings for our houses - and impressively reflect their origin, character and craftsmanship.

Salad & vegetables
The Seewiesn is part of our agricultural business - and a project close to our hearts. Our fields complement the products of our regional suppliers and provide our kitchens with seasonal freshness. Potatoes grow particularly well here, as well as maize, which is ground into fine polenta flour in the traditional way, and beautiful pumpkins.


Karlheinz also grows crisp lettuce and sun-ripened tomatoes at Seewies. Not always - but always when they are in season: freshly harvested, honest and full of flavour.

Fresh from the garden

Freshly harvested vegetables in your hands, on the way to the hotel in an old 4x4 Panda - a small image of living proximity to agriculture. And for regionality, which does not have to be claimed because it has long been part of everyday life.

Appreciation
For us, fresh from the garden doesn't just mean „home-grown“. It means knowing where it comes from. Seeing how it grows. Feeling how much time goes into a tomato, how much sun goes into a bunch of herbs. If you harvest your own produce, you don't throw anything away carelessly. You only take what is ripe. And you use what's there. This is exactly what appreciation means: towards nature, towards the product - and towards the guest. Because what we take from the garden doesn't end up just anywhere. It ends up on the plate with respect.
Regional
Regional is not a trend for us, but part of everyday life. Because the good stuff is so close. Vegetables, herbs and fruit come fresh from our own garden - and what we don't harvest ourselves, we get from people we know. From the farm next door, from the village, from South Tyrol. Short distances, honest quality, full of flavour. So everything stays seasonal, fresh and harmonious. And you can taste the difference: less „from somewhere“, more „from here“.
Sustainability
For us, sustainability means being aware of what nature gives us. Not everything grows in the garden at the same time - and that's the beauty of it. We harvest seasonally, use what is ripe and process it in such a way that as little as possible goes to waste. Herbs are dried, fruit is preserved, vegetables become soup, ragout or a delicious side dish. Short distances, little packaging, lots of manual labour. Not perfect, but honest. For us, sustainability is not a big word - it's a lot of small decisions, every day.
Pure and honest
Sometimes it doesn't take much to make something taste really good. A ripe tomato. A few herbs. A drop of olive oil. For us, pure and honest means: nothing hidden, nothing covered up. We cook with what's available - fresh from the garden, seasonal, full of flavour. No frills, no artificial extras. But with time and care. Because when the ingredients are right, it can be simple. And that's exactly what we love: Food that tastes of nature. And like home.

Swimming around the house

Around the house on the hillside grows what South Tyrol is all about: wine. The grape harvest begins in autumn. Then the vineyards are filled with sunshine, ripe berries and hustle and bustle. Cabernet, Merlot and Vernatsch are harvested here for the Kalterersee wine. The snapping of scissors, the sounds of dialect and the rattling of crates characterise this warm, golden time - and show how much heart is in every glass.
